One talented, young, spirit, changing that narrative one slice at a time is Marrow’s Khatja McKay. Khatja is a butcher’s apprentice at the first-of-its-kind neighborhood butcher shop and eatery. Further spreading her love of butchery and seizing the opportunity to educate and engage her community, Khatja also lends herself to teaching charcuterie classes, and hosting her own celebration of gastronomic excellence, The Baldwin Supper Club. She has traveled the food capitals of the world, and pours those experiences into the shaping and blossoming of her craft at every step.
